Taco, Tequila & Cerveza Festival – Denver, Colorado

I’ve been to my fair share of food truck festivals before. However, walking into the Taco, Tequila & Cerveza Fest felt like walking into someone’s weird dream. There was, as promised, tacos, tequila, and cervezas, but there was also a wrestling ring in the middle of the food trucks. While the mariachi band played on, my friend ZomBrizz and I quickly tried to get our bearings and find the tequila samples. (There was no way we could continue this surreal experience sober.) We found out rather fast that the inside of the festival wasn’t any less weird. The DJ was blasting early 2000s R&B as we navigated through the crowd to get our shot glasses, singing along to Usher’s “YEAH.” (People sleep on early 2000s Usher)

By this time, it felt like being at a party thrown by someone who was rich and super into Mexican themes and lady wrestlers. It was basically what I imagine Donald Trump’s nightmares are made of. Our first moves were toward this “organic tequila,” which sounded terrible but hey, free is for me. As soon as I threw it back, I was immediately filled with regret and couldn’t stop thinking, “hipsters ruin everything.” Bri and I decided to change course and head towards the food instead since we were clearly too hungry to make good decisions.

Our favorite trucks of the night were the Colorado Pig Rig (which is the subject of my next article) and Cebiche Highlands. We got a chance to chat with Benjamin on behalf of Cebiche Highlands while he fed us an amazing Baja Taco. He told us Cebicha Highlands is actually Peruvian cuisine, but their twist on the Baja Fish taco really stood out from the crowd. Unlike the majority of the tacos at the festival, theirs were on the larger side so you got a great mixture of all the ingredients. Hats off to Benjamin for his recommendation. The blend of Peruvian spices and cream made us feel like we were vacationing on a faraway island.

We got so swept up in tacos and tequila shots that by the time we went for desert all the fried plantains were gone. All night we heard people talk about the delicious fried plantains the Fiesta Fusion truck was serving. Unfortunately for us, so did everyone else. Fried plantains are great because you completely disregard the whole “fried” part in your brain and focus on the fact that you’re eating fruit. Regardless of our lack of deep fried banana, I think the night was a success. Also, there’s a chance I may have hired that DJ.
