JG Original: Veggie Noodle Recipes Ready in 30 Minutes or Less

We’re all in a hurry these days, and getting something to eat? It’s hard enough, without the focus that we all need to have on eating healthier. And what about fruits and vegetables? Getting the recommended number of servings of those vitamin- and antioxidant-rich goodies into our daily eating habits is hard, too.

Luckily, there’s a way to combine the need for speed (when we eat) with the need to improve the food that we’re eating—noodles made out of vegetables.

Sometimes called zoodles or spiral noodles, these are simply vegetables cut (using a variety of tools) into a shape that resembles and can be substituted for pasta. They’re a great way to cut calories (veggies noodles have fewer than traditional flour-based pasta) and increase your consumption of vegetables. And if you choose the right vegetables, your spiral noodles can stand up in pasta-like form to most sauces.
