Reese’s, Funfetti, Snickers, and Lemon Cake Mix Cookie Recipes

I wanted to make cookies for the holiday season but my schedule and budget wouldn’t allow it. So I did some research and found the cheapest, fastest, easiest, and of course delicious cookie recipes and found that you can make cookies out of boxed cake mix.


Funfetti® Cake Mix Cookies

Ingredients:

  • 1 (19 ounce) package cake mix with candy bits (such as Pillsbury® Funfetti®), or more to taste
  • 1/3 cup canola oil
  • 2 Eggs

Instructions: 

  1. Preheat oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.
  2. Mix cake mix, canola oil, and eggs together in a bowl until smooth. Roll dough into walnut-size balls; flatten to 1/4-inch thick on baking sheets, 2 inches apart.
  3. Bake in the preheated oven until edges are golden, 6 to 8 minutes.

Snickers Cake Mix Cookies

Ingredients:

  • 15.25 oz. Betty Crocker Milk Chocolate Cake Mix box
  • ½ cup Canola or Vegetable Oil
  • 2 Eggs
  • 11.5 oz. Snickers Minis bag, chopped

Instructions:

  1. Preheat oven to 350 degrees.
  2. Unwrap Snickers Minis and chop into pieces. {I sliced each mini into 6 pieces.}
  3. Combine cake mix, eggs, and oil in large mixing bowl, and beat well.
  4. Stir in chopped Snickers pieces with spoon.
  5. Chill dough in refrigerator for 1 hour.
  6. After dough has chilled, drop onto ungreased Nonstick Cookie Sheet in rounded balls.
  7. Bake for approx. 7 – 9 minutes, or until done. ENJOY!

Peanut Butter Cup Chocolate Cake Mix Cookies

Ingredients:

  • 1 (18.25 oz) box chocolate cake mix
  • 2 eggs
  • 1/3 cup canola or vegetable oil
  • 1 8 oz bag Reese’s Minis

Instructions:

  1. Preheat oven to 350°
  2. With your mixer, beat together cake mix, oil and eggs until combined.
  3. Pour in entire bag of Reese’s Minis.
  4. Mix on low until Reese’s are evenly incorporated.
  5. Roll the dough into tablespoon sized balls and place n a parchment lined baking sheet about 2″ apart. Cookies will spread.
  6. Bake for 8-9 minutes.

Lemon Cake Mix Cookies

Ingredients:

  • 1 (18.25 ounce) package lemon cake mix
  • 2 eggs
  • 1 teaspoon lemon extract
  • 1/3 cup confectioners’ sugar for decoration

Instructions: 

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Pour cake mix into a large bowl. Stir in eggs, oil, and lemon extract until well blended. Drop teaspoonfuls of dough into a bowl of confectioners’ sugar. Roll them around until they’re lightly covered. Once sugared, put them on an ungreased cookie sheet.
  3. Bake for 6 to 9 minutes in the preheated oven. The bottoms will be light brown, and the insides chewy.
